Protecting the “Grana Padano”
designation


 Grana Padano has been a D.O.P. cheese since 1996. EC Regulations 2081/92 and 1107/96 state that any food with this designation must comply with the requirements laid out by a Production Disciplinary, which is issued for each Designation of Origin product by its respective consortium. In this case, this document illustrates the obligatory procedures governing the processing of the milk used to make Grana Padano and the characteristics the cheese must possess.
The main concern is not only to offer consumers a product steeped in tradition, but also one that is top quality, certified and endorsed.
In order to ensure each producer observes the regulations established by the Grana Padano disciplinary and that the cheese complies with the requisite standard, a control plan is implemented from the source to the sales outlet both by an authorised body (in accordance with art. 53 of Law 128/98), which also deals with Grana Padano’s D.O.P. certification, and by Consorzio per la Tutela del Formaggio Grana Padano, which brands all the cheeses that meet the required standards.

Consorzio per la Tutela del Formaggio Grana Padano has a broad range of powers to inspect and supervise producers, maturers, packagers and retailers in order to ensure that the processes never jeopardise the authenticity and goodness of this D.O.P. product. These checks are carried out without any prior warning and in serious cases, the Fraud Squad and Anti-sophistication authorities may be called in.
