Livestock inspection and analysis
Dairy cattle in 27 provinces produce the milk used to make Grana Padano. The herds are regulated by a D.P.R. that came into force on 30th October 1955, later amended on 1st September 1999. These provinces encompass: Alessandria, Asti, Cuneo, Novara, Torino, Vercelli, Bergamo, Brescia, Como, Cremona, Mantova to the left of the River Po, Milan, Pavia, Sondrio, Varese, Trento, Padova, Rovigo, Treviso, Venice, Verona, Vicenza, Bologna to the right of the River Reno, Ferrara, Forlì, Piacenza and Ravenna, plus the areas administered by the local councils of Anterivo, Lauregno, Proves, Senale-San Felice and Trodena, in the autonomous province of Bolzano.
Each farmer must ensure that the milk their cattle produces is fit to be made into Grana Padano. Furthermore, they have to give the dairy a self-certification which states the number of dairy cows in the herd, their total annual and unitary production, the non-use of outlawed foodstuffs in the fodder, compliance with hygiene and health regulations (in accordance with D.P.R. 14th January 1997, no. 54) and the milk storage methods.
It is the task of Consorzio per la Tutela del Formaggio Grana Padano and the Certification Authority to inspect the herds and to ensure that the farmer has given the correct information. They must also check that the farms comply with current hygiene and health regulations regarding the production of quality milk, that the cattle fodder does not contain any banned products, and the milk is stored at the correct temperature, especially if the cows are only milked once a day. |
