Grana Padano wheels are divided up using a knife with a drop-shape blade so as not to damage its grainy structure.
The wheel, however, is not so much cut as split.
Firstly a 1 - 2 cm incision is made along the two faces of the rind.
Another incision is then made down the sides in order to join up the lines so that it can be cut vertically and then horizontally.Repeat this procedure to cut the cheese into wedges.
As with many cheeses, the flavour of Grana Padano may vary in different parts, depending on its vicinity to the rind.
Even the smallest portions of Grana Padano are not so much cut as split into slivers with its special knife.
