Ingredients
for 4 persons:
300 g minced veal, 200 g stale bread,
80 g mortadella, one glass of milk, one egg and one
yolk, 5 slices sandwich loaf, 80 g grated Grana Padano,-
one tablespoon chopped parsley, nutmeg, pepper, salt.
• Sieve the sandwich loaf or grate it very coarsely.
• Soften the stale bread in the milk; salt and pepper
lightly, flavour with nutmeg, then mix with a fork until you obtain
a homogeneous mixture.
• In a bowl mix the minced veal, the finely chopped mortadella,-
the parsley and add the softened bread, the
Grana Padano, the eggs lightly beaten and mix- with care. Salt to
taste.
• Divide the mixture into balls the size of a walnut and
coat them with the grated bread, pressing them carefully, then cook
in hot oil, possibly in an iron frying pan.
Remove from the heat and drain on absorbent kitchen paper.
