Ingredients for 4 persons:
500 g pumpkin, 100 g grated Grana Padano, 2 eggs,
100 g cream, 4 tablespoons extra virgin olive oil, a sprig of rosemary,
1/2 glass white wine, one clove of garlic, salt, nutmeg.
• Collect the pumpkin flesh, wash it, cut it into small
pieces and fry it lightly with the crushed garlic and the
rosemary. Let the flavours blend over high heat,
mixing all the time.
• Sprinkle with the wine and cook for about 20 minutes-
over a low heat, with a lid.
•When it is finished cooking, put the pumpkin in the blender
to-obtain a puree.
• Put into a bowl and stir in the Grana Padano, the yolks,
and flavour with nutmeg, salt to taste.-
•In a separate bowl, beat the cream and gently mix it-
into the pumpkin puree.
• Pour the mixture into a dish and place in the
refrigerator for a few hours.
Serve with toast rings and shelled walnuts.
