Ingredients
for 4 persons:
For the dough: 300 g flour, 200 g ricotta, salt.
For the filling: 4 heads of Treviso radicchio, 150 g
Grana Padano, 60 g chopped walnuts, 30 g extra virgin
olive oil, one shallot, salt, nutmeg.
• Mix the flour with the ricotta, a little salt, and start
to knead the ingredients. Add a little water to soften the dough
and keep kneading until it is smooth and homogeneous.
• Shape into a loaf and put it in the refrigerator to rest
for about 30 minutes.
• lean and wash the radicchio then quarter it and
fry it lightly in the oil with the sliced shallot. - Let it braise
for a few minutes.
• Roll out the dough and line a buttered flan case.
On the pastry lay the braised radicchio, the walnuts and lastly
- the flakes of Grana Padano.
• Bake in a preheated oven (180°C) for about 30
minutes. You can use any left-over dough to make a
pattern on the surface.
