| Ingredients
for 4 persons:
24 fresh anchovies
1 tbsp. of capers
2 cloves garlic a sprig of parsley
4 tbsp. oil
2 tablespoons breadcrumbs
70 g grated Grana Padano salt, pepper.
• Cut the heads off the anchovies, open them and remove the
central bone. Wash well under running water and leave to drain.
• Finely chop the capers with the parsley and the garlic
and put them into a bowl with the oil, the breadcrumbs and the Grana
Padano.
Salt to taste and flavour with a generous amount of
freshly ground pepper and mix well.
• Lay out the anchovies and distribute the mixture of Grana
Grana Padano and seasoning on their insides.
• Roll up the anchovies, starting from the head so that the
tails stay on top.
• Oil an ovenproof dish and lay the anchovies in it, pressing
them slightly to prevent them opening during cooking.
• Put in a preheated hot oven (180°C) and cook for about
15 minutes.
