Ingredients
for 4 persons:
300 g finely sliced filet of beef
150 g tender lettuce
150 g Grana Padano, 2 tablespoons balsamic vinegar, 1 tbsp. strong
mustard, 5 tablespoons extra virgin olive oil, a few sprigs of chives,
salt and pepper.
• Get the butcher to lay out the slices of filet on separate
sheets.
• Clean, wash and accurately dry the lettuce and put-it in
a bowl.
• Separately, dilute the salt with the vinegar, add the mustard-and
mix well.
• When you have obtained a smooth paste, add the oil
and emulsify, beating with a fork.
• Season the lettuce with a little lemon and oil and arrange
it on the plates.
• On each plate, as a crown on top of the lettuce, arrange
the slices of filet, the flakes of Grana Padano, chopped chives
and a generous amount of freshly ground pepper.
Sprinkle the carpaccio with the mustard sauce.
