 Chicken salad
 
 Ingredients for 4 persons:
1 chicken breast
40 g butter
100 g Grana Padano
50 g toasted almonds
4 tablespoons brandy
one head of curly lettuce
3 tablespoons vinegar
a few olives
one tablespoon strong mustard
4 tablespoons extra virgin olive oil
salt and pepper.

• Cut the chicken breast to obtain thin slices, then cut these into strips.
• Fry them lightly in a pan with the butter over a brisk heat and, when they are golden sprinkle with the brandy.
• Add a little water; salt and cook for a few minutes
with a lid.
• In a bowl, put the salt, the vinegar and the mustard,
mix well and, lastly, stir in the oil.
• Wash and cut up the lettuce and season it with the sauce.
• Distribute the lettuce on the plates and lay the strips of chicken on top, the slivers of almonds, the pitted olives and the flakes of Grana Padano.
